Cédric Bouchard’s Roses de Jeanne “CER – Le Creux d’Enfer” OP Rosé de Saignée 2010 is a profoundly rare and mature expression of Pinot Noir from the Côte des Bar, produced only in exceptional years. Made via extended skin maceration and bottled with zero dosage, it has evolved into a deeply vinous yet refined Champagne, showing layered aromas of dried red berries, blood orange, rose petal, savory spice, and chalky minerality. The palate is structured and energetic, with fine mousse, lifted acidity, and a long, complex finish that highlights both the wine’s age-worthiness and the singular character of this iconic cuvée.
100% Pinot Noir from the .07 hectare lieu-dit of Le Creux d'Enfer. That's just a few rows! Made by the “saignée” method of crushing the Pinot Noir and running off the juice after several hours of skin contact to produce the classic rosé color (rather than adding a bit of still red wine). Extremely limited production.
