Domaine Jean Dauvissat Pere & Fils Fourchaume, Chablis Premier Cru, France 2023
This is one of the standout wines in the Dauvissat 2023 lineup. Fabien Dauvissat has brought the 22-hectare family domaine back into the spotlight, with the estate now organically certified and moving toward biodynamic farming. The Fourchaume parcel is only 0.60 hectares, with 43-year-old vines. It sits on the southwest-facing slope that essentially continues the Grand Cru hillside, giving Fourchaume excellent ripening and natural richness.
The 2023 is broader and more powerful than their Vaillons, with pear, candied citrus, fresh pineapple, white flowers, chalk, oyster shell and iodine, followed by a generous, creamy palate with excellent mineral drive. The key distinction is texture—Fourchaume has noticeably broader shoulders and a more gastronomic personality than the more linear Vaillons.
