A 5th generation winemaker in his family, Nicolas Rossignol is a perfect example of how a newer generation of vintners in Burgundy have brought tradition and knowledge from the past into the future. To better understand vinification after his studies, he worked at various wineries you may have heard of such as Louis Latour, Vieux Telegraphe, and and Chateau Cardonne, as well as Domaine Boschendal in South Africa. He returned to Burgundy in 1994 and now produces exceptionally beautiful wines in Volnay and Pommard by balancing the elegance and power of all his different vineyards.
- Geography : Located at the feet of the Cailleret with a break in the slope; which is here softer. A light hollow whose name comes from the Latin “cava”.
- Soil and environment : The depth of the ground is more important here than in other parts of the domaine. A blend of clay and pebbles.
- The vine : Blend of a 40 and a 60 year-old plot from the mass selection.
- The wine : Rich, fat and generous on the palate with notes of red and black fruits. Round and silky with soft and tender tannins : It is the perfect incarnation of the wines of Volnay.
