François must be one of the most unique producers in Sancerre, using minimal intervention in the cellar in order to make wines that are absolutely expressive of their terroir. This has even brought him into conflict: in some vintages his wines haven’t met particular criteria necessary to be classified as Sancerre, and have had to be sold as Vin de France. What is constant, however, is these are some of the finest Sauvignon Blancs made anywhere in the world.
The 2023 François Cotat Sancerre Chavignol Rosé is a rare, dry, 100% Pinot Noir rosé from a small parcel in Chavignol, Loire, France, known for its complex flavor profile and aging potential. It features notes of red fruit, stone fruit, and wild berries, with a savory, mineral, and spicy finish. The wine is made in an old-school, artisanal style, fermented with indigenous yeasts and aged in old barrels without being fined or filtered.
