“Les Noues” 2021 is a striking, single-parcel expression of Pinot Noir from Écueil that captures the precision and energy of one of Champagne’s most exciting grower-producers. From a cool, low-yielding vintage, it opens with vivid aromas of red berries, citrus peel, pear, and brioche, lifted by chalky minerality and subtle oak spice. The palate is taut and highly focused, driven by racy acidity, fine mousse, and a dense yet elegant core of fruit that reflects the sand-and-chalk soils of the site. Bone-dry, linear, and intensely energetic, this is a Champagne of purity and tension combining Savart’s signature vinous depth with a long, saline, mouthwatering finish.
