Junmai Daiginjo Assemblage 5 is a precision‑crafted, multi‑vintage sake from Toyama, created by Richard Geoffroy. Blended from multiple rice varieties and yeast strains, it’s designed with a Champagne‑like philosophy of balance and structure.

Assemblage 5 is the most lifted and focused edition—showing aromas of white peach, Asian pear, citrus blossom, and subtle almond. The palate is silky yet linear, with refined umami, bright acidity, and a long, clean, mineral finish.
