“Le Fond du Bateau” 2016 A precise, terroir-driven Grand Cru Champagne from the chalk rich soils of the Cote des Blancs, showcasing the purity of 100% Chardonnay. Bright citrus, green apple, and white flowers are layered over a taut, mineral backbone, with fine mousse and vibrant acidity bringing energy and lift. "The 2016 Extra Brut Blanc de Blancs Le Fond du Bateau Chouilly No. 16 Chouilly Grand Cru was picked from over 50-year-old vines in the eponymous parcel in Chouilly. Just over half of the base was fermented in wood, with the rest in stainless steel. The wine was aged for seven years and seven months on lees. Gentle lemon and chalk on the nose convey a message of understatement. The palate offers a linear streak of chalky freshness, buffered by smooth yeast and tiny, fine bubbles that swirl salty butter flavors around.
